I’d like to know if it is possible to order the cameras per user. I mean, appart from each user having their own cameras, I’d like to change the order in what they are shown for each user. Is it possible?

It is possible in Source ordering, BUT if you do that you will mess up the whole system. So it is NOT recommended ;).
When logged in as Admin you Add all the sources. Each source will get the unique name and numbered from 0 to 15. That basic name will be used in the system for search, deletion and whatever else. If that number is changed your live video and Library will not be from the same camera.
